Orange Meringue Cookies

I wanted a pretty cookie to close out summer and these orange meringue cookies were perfect, so light and airy.

I used red and yellow food coloring to make the orange color for my meringue cookies. They look like orange popsicles color and so much fun to try and find the right color. This was one of my favorite summer cookies.

Steps

1
Done

Add egg white to mixer-bowl and beat on medium speed till the egg whites are frothy.

2
Done

Now add the cream of tartar and turn the mixer onto the high setting, I let this beat for about a minute.

3
Done

Important step - Add the sugar about a tablespoon at a time, if you add to fast you will not get the light and fluffy meringues you are seeking. After all the sugar is added continue to mix on high till you get stiff peaks. This could take 10 to 12 minutes.

4
Done

Now fold into the mixture the orange extract then you want to add your food coloring. I did 2 drops of red and 3 drops of yellow to get the orange color I was seeking.

5
Done

I used a piping bag with a large star tip and piped in a circle with it closed into the middle. Place them about an inch apart on a baking sheet with parchment paper. I did bake both pans at the same time side by side in the oven for 45 minutes. After the 45 minutes turn the oven off and let them sit in the oven for an hour. Store them in an air-tight container.
