Whether gluten-free by choice or due to allergies, this type of baking can often be finicky. I've done the testing and perfecting to use egg whites or almond flour to ensure a great result every time.
There are classic recipes like meringues that are already gluten-free, so it's a great way to get into the groove of a new way of baking. You can also pick up a bag of 1-to-1 (or "cup for cup") gluten-free all-purpose flour and use it in any of my recipes that call for all-purpose wheat flour. Those blends are made to give you an easy baking experience.
