Chocolate Chip Cookies

These chocolate chip cookies were a hit and so easy to make. A great recipe to make with the kids.

  • 1 ½ stick Butter unsalted
  • ¾ cup Dark Brown Sugar 150g
  • ¼ cup Sugar white 50g
  • 1 Egg
  • 2 teaspoons Vanilla Extract
  • 2 cups All purpose flour 250g
  • 2 teaspoons Corn starch
  • 1 teaspoon Baking soda
  • ½ teaspoon Kosher Salt
  • 1 ¼ cups Semi-Sweet Chocolate Chip 225g


  • Weigh or measure the dark brown and the white sugars and set them aside. In another bowl, weigh the flour, corn starch, Kosher salt, baking soda and run a whisk through to blend.
  • In a stand mixer, mix the butter and sugars on a medium speed for 2-3 minutes until light and fluffy looking. Add the egg and vanilla extract and blend. I scrape down the sides and across the bottom. At a low speed, slowly mix the dry ingredients into the wet until everything is combined. Add the chocolate chips and mix for a few seconds till they look even throughout the cookie dough.
  • Cover tightly and refrigerate for at least 1 hour. This dough does need to be chilled, so don't skip this part.
  • Preheat oven to 350°F, and line 2 baking sheet pans with parchment paper or silicone baking mats. Spoon out about 1.5 Tablespoons of the dough and roll with your hands into individual balls. I can get a dozen on one baking sheet. Bake for 14-15 minutes until the edges are golden brown. They will be puffy, but they do deflate while cooling. I leave them on the baking sheet for 5 minutes before moving to a cooling rack to finish.
