What goes with Blueberries?

Flavors that go with Blueberries

My Three Flavor Triangle!

When deciding on flavors to add to my cookies I like to start with 1 main flavor. This could be a berry, nut, fruit, or syrup, then adding flavors that go well with that ingredient.

I like having 2 other flavors to go with my main ingredient, in the case of my Fresh Blueberry Lemon Maple Cookies, blueberries were the starting ingredient. Ready to eat Blueberry Cookies

Blueberries main flavor

When purchasing fresh blueberry they come in different colors and sizes. When tasting them some are juicy and sweet and of course, some are a little tart. The dilemma of how to make them consistent in taste was the answer I was looking for.

Pure Maple Syrup 2nd Flavor

White sugar was not the answer but what can I use to add sweetness to some of the blueberries. I looked in my trusty book the Flavor Bible and found that maple syrup would be a great answer to adding the sweetness.

I needed a liquid to marinate the blueberries. The mild sugar flavor of pure maple syrup would be a good choice. I now have two of the three flavors for my cookies, blueberries and maple syrup. Now for the third flavor!

Lemon Zest 3rd Flavor

I love the taste of lemons but did not want a lemon cookie dough with blueberries in it. I decided not to use straight lemon juice because it would add more liquid to the cookie dough and tartness. The blueberries have natural juice plus using maple syrup added the sweetness I opted for lemon zest.

Lemon zest is a perfect way to add some brightness to this cookie and cut through some of the butterfat. The lemon zest will add the lemon flavor as opposed to lemon juice which adds tartness.
